Monkey’s Almond Cookies

When Master Shifu told Po that Monkey keeps his Almond Cookies on the top shelf, only then was the Panda able to climb 10 feet off the ground and suspend himself in a perfect split. It was the promise of Almond Cookies that allowed Po to show his true potential, the glimmer of a Kung-Fu Master. Therefore: Monkey’s Almond Cookies = Awesomeness and Super-Attractiveness! Feeling enlightened yet? Don’t you wish that there was an Almond Cookie Initiative in your life to help your potential break through the way it happened for Po? With this recipe, AWESOMENESS CAN BE HAD!

Here is what you will need for a 30 cookie recipe:

1/2 cup of REAL butter at room temperature (plus one tsp of butter for later)
1 cup of Sugar (a half cup for the cookies, and a half cup in a little bowl for topping the cookies later)
1 smallish egg
2 tablespoons of Milk (or Almond Milk)
1 tsp baking powder
1 tsp Almond Extract
1 1/2 cups of Flour
1/2 tsp Salt
1/3 cup of chopped Almonds
1 clean glass or plastic cup with a flat bottom

Heat your oven to 325°F (170°C). Add all of your dry ingredients (minus the almonds) into a big bowl. Make the Pit of Sarlacc (Please see: Return of the Jedi) and fill it with your wet ingredients. Stir until your don’t see anything dry.

Toss in your Almonds and stir. Your batter should be nice and smooth except for the Almond bits. Spoon your batter into little mounds on a baking sheet lined with wax paper. Smear a little butter onto the bottom of your flat-bottomed glass, dip it into your extra half cup of sugar.

Press the bottom of the glass onto each cookie just enough to flatten them out. Here is what it should look like.

Put them in the oven for about 10 minutes, or until they start to turn golden around the edges. Let them cool on the wax paper.

Now, position your cookies in a critical spot that will allow your Super-Awesome-Attractiveness to shine through! I put mine on top of the fridge so A: I wouldn’t forget to dust up there, and B: So my Husband won’t eat them all. Nifty, huh?
